Slow down summer!

This month is just flying by way too fast! We are busy every single day! Between working, gardening, summer reading program, fun family activities, play dates and parties, we are on the go-go-go! I'm not going to lie, I love being so busy but looking at my monthly calendar stresses me out!

We just spent a really great weekend at my aunt's lake house celebrating the 4th of July. We had so much fun swimming, canoeing, fishing, eating, and watching fireworks. It was Owen's first time seeing fireworks and it was such a joy to see him sooooo excited! He had to comment on every single one and he kept getting louder and louder with excitement!

Our other exchange student we had when I was in college has come back to visit. It's been so fun catching up with him and seeing him interact with Owen. They have so much fun playing together.

I spent a total of 5 hours working in our largest garden yesterday. Needless to say, I'm a little sore today. The weeds and Japanese beetles and potato bugs are out of control this year. It's tough to stay on top of them when we are only there 3 days a week. But everything is growing so, so well up there. We've been harvesting beet greens, snap peas, black berries, strawberries and green beans from there. I've got 3 freezer bags of green beans, 2 of peas, and 3 of beet greens in the deep freezer already. We've got baby cucumbers and zucchinis forming. I am sooooo nervous for canning to start. We planted so much extra this year because last year we didn't get as good a harvest because all summer was just a big drought. This year it's been nothing but rain and hot humid weather and the plants are in love. We've still got to buy more canning jars/lids and get our shelving situated in the basement for the finished canned products.

We had to harvest our onions from our one garden because they weren't doing to well. So they will dry out for a few days before we use them/ freeze them.

 We have baby tomatoes!

 Busy little garden bee!

Owen's sun flower is doing amazing. We got this plant from a library project .

My new $2 kitchen towels from Kohl's!

Our lovely finds from a family runned farm stand. Cherries, raspberries, and red currants. The peas are from our garden!

Small Glimpse & Big Promises

Yesterday I got a small glimpse of what our life would be like living on our future homestead. It was such an amazing feeling! We have our largest garden at my inlaws house out in the country. We are there several times a week to care for it. Yesterday we spent a combined total of over 3 hours of hard work in that garden. We weeded, and weeded, and weeded, and weeded some more. We hoed the dirt, taste tested our almost ready sweet peas, and thinned out and harvested some beet greens. A fast moving storm came through and we sat on the front porch watching it. Steve went back out to work some more and I got the little one down for a nap. Once he was asleep I started on dinner and prepared some of our just picked beet greens as a side dish. I called Steve back in when it was ready and we ate in peace! Owen napped for 2.5 hrs! We came back home and I blanched and froze the remaining beet greens for our freezer stash.
It just makes me so happy and blessed when we harvest our gardens. I know that our hard work is paying off and I am feeding my family healthy, home-grown food.

We've also been able to harvest some kale. Which I then turned into kale chips.

 Freshly picked beet greens

 Ready to get blanched!

Our first broccoli!
